Notes from a small kitchen. Mostly simple food, occasionally ambitious.
October 2026
Every one-pan recipe promises easy and delivers soggy. The fix is boring: dry the chicken thighs properly, start them skin-down in a cold pan, and leave them alone for twelve minutes. Only then add potatoes, garlic and lemon around them and move the pan to the oven.
September 2026
The starter finally behaves. What changed: feeding it at the same time every day and keeping it somewhere warmer. The loaf still spreads more than I would like, so the next experiment is a slightly lower hydration and a longer cold proof in the fridge.
August 2026
Two tins of good tomatoes, a lot of olive oil, one onion cut in half, and a knob of butter. Simmer slowly, take the onion out at the end. It is almost embarrassingly simple and better than anything with twenty ingredients.
July 2026
I used to cook five identical boxes and be sick of them by Wednesday. Now I prep components instead: a tray of roasted vegetables, a pot of rice, one protein, and two sauces. Mixing them differently each day makes the week feel less like a sentence.
